I have a bread maker too. I have a gf baker in town and she makes a awesome gf pizza crust and some goodies. Lots of sugar tho my nutritionist has me confused with the sugar he says go for it eat it we need it but endo diet it is a nonon and def causes pain in most of us. So what is everyones thoughts he says do not use sugar or butter substitite and I have stopped obviously I gotta get the natural sugar with the fruit I eat but what about a gf cookie?

Keri I struggle with this all the time too. Yes one doc will say, oh, have some sugar, but then we KNOW sugar is bad on the endo diet - hey well, I already stay away from SO many things I will give myself a break once in a while but it's so hard to be limited on sugar. I wouldn't use sugar or butter substitute just because it's bad for you too. I will just lookforward to finding a gluten free cookie! there are some from Pamela's that are really good, the peanut butter chocolate chip ones are to die for. I ate a whole box lol

Condtridictions by the docs shocker? lol I try to do it all in moderation but I have found that a good dozen of the gf cookies go fast. Great for the gluten free but not so go with the sugar that the baker puts in them. She has celiac and swears to me that a sugar never killed anyone lol I agree but it can cause us pain. I fell off the gluten free wagon this weekend with cake pops I had made for a event so with sugar, and gluten in my system I feel awful. The next few days will be trying to repair what I did wrong. Veggie's, salmon, water, and fruit. It takes very little for me to transition I just have to stick with it and once I am on track I do great.

I'm in suspense to see if the progesterone pill I'm taking is gonna make me gain weight. I seem to be pretty HUNGRY all the time lol, going on a trip on Friday, I'm in suspense hoping my skinny jeans fit on Friday LOL! And craving sugar AND eating too much all the time is NOT helping my tummy pangs! aaaaah! I'm just so happy to leave town my diet goes out the window anyway but I don't want to get fat until I'm there, silly huh.

wow, great websites.
and Lisa, I'm always a bit free with recipes, since I was raised in teh kitchen without them, but this time I followed pretty much the recipe on the side of the bob's redmill gluten free all purpose flour, wiht the following changes:
1. corn starch for potato flour 2. coconut milk for regular milk (and left out the sugar since coconut milk is sweet) 3. egg whites for eggs (2 egg whites = 1 egg).
There was one other small ingredient that I dind't know that I just left out, and it worked fine.
Xanthum gum is a coagulant that helps your bread stick together, when you don't have gluten. You can get it in most grocery stores.

one of these days Kristin, I'm makin some bread. I live in fear however having roamed the world eating the best bread ever so I'd almost rather go without. I am going to make some GF granola bars for my trip though....

Thanks for answering Rust! Didn't even think to look at the recipes on the bag. I know the website has a lot of good recipes too. Love that you used corn starch instead of potato flour - I always have that on hand. Did the coconut milk add a coconut taste to the bread? Unfortunately I HATE coconut!!! I bake a lot of bread so I'm excited to give this one a try!!!
Xanthum gum - makes sense.
GF granola bars - great idea!!! They travel so well.

Pretty In the afternoon I crave sugar so what I do is fill a bowl of strawberrys and blueberries I heat them up and throw a tad of sugar on them not alot just enough. Wonderful low calorie snack and makes me feel great after I eat it knowing I just filled my belly with something good for me. Love the idea of adding almond milk or coconut milk for the bread! I love the stuff! I really could live off of my berries and almonds!

I don't remember what thread it was in but Shannon Elizabeth suggested a cookbook called, "Cooking for Isiaih". Just got it from the library and it makes me excited to try some new stuff! It's ALL gluten and diary free, and she even has a standard gluten-free mix that can be used as a substitute for flour and a similar one for PANCAKES, ladies, pancakes! Oh, how I miss them!!!!
I WILL be buying this book! Thanks for the suggestion, Shannon Elizabeth!

Buckwheat pancakes are my favorite....A little fruit on top and you have perfect healthy pancake:)

Yep - buckwheat pancakes are the favorite in my house too. My kids love them, which makes me very happy!!! I like to saute' apples in butter and cinnamon and serve it on top. YUM!!! I'm going to try making waffles with buckwheat and see if it's just as tasty. The ingredients are basically the same as pancakes.

I know I've been lactose intolerant for years so I always used to buy the lactose free stuff, but in the last year, I gave up everything that I used with milk anyway (and can't stand to drink it plain) so I stopped buying it. On a whim, I decided to try some unsweetened almond milk and bought some gluten free cereal (yay for Rice Chex!!) and topped it with some fresh raspberries and I just about diet and went to heaven. Not only is the almond milk SO good, but I forgot how much I missed cereal!!!

Can't get almind milk/nut milk over here very easily, but I have a recipe from my 'Waterfall Diet' book. Soak a handful of almonds overnight in water, next day, blitz and seive. I'm going to try it next week.
