hey, Caramia, thank you SO much! and yes we would love to see any recipes you have time to share. there is a recipe thread cjlevett.proboards.com/index.cgi?....ead=2835&page=6here and you can add recipes any time you like I have to go add one, I made indian enchiladas lol that's all I can think to call them. I wrapped samosa ingredients in corn tortillas and baked them with coconut cream. funny what you can come up with huh! anyways thank you again and feel free to post an intro if you like. or they will probably move this one over for you who knows. love your post, I need to eat more kale too

So I"m getting to the "desperate" stage again in my endo. I have to change something/do something. I spent several days researching IBD since my GI doctor felt what I had was IBD until the biopsy came back normal. I have researched it enough to know that its very difficult to diagnose so I'm going with this diagnoses for now. The frustration with making some kind of change is that many of the "healthy foods" are my trigger foods. I have eliminated several things like nuts, popcorn, lettuce, spinach, kale... I'm still working on the rest of the list. I have convinced myself to start eating green beans, and I actually like them. My hubby cooks lots of veggies (and I don't eat them but slide them off to one side of my plate I have gone off milk before and it hasn't made a difference but I may try again. I'm specifically looking to get rid of the bloating/swelling/angry belly. I eat very little wheat and was tested for a gluten sensitivity but I will be trying to limit even more and see if its something that will help. I don't know what I can eat at work as the salad bar is the only thing that's even remotely healthy. My hubby is becoming quite the experiementer so I bought him brown rice (didn't tell him it wasn't white, hoping he doesn't notice) I do eat chicken/pork, no beef so I think that's okay. (Just need to stop the garlic bread with it that my hubby makes. Its so good but I think its what gets me!) My hubby cooks mostly healthy, I just need to actually eat what he cooks that's healthy. So finding food that I can eat that makes me feel good: Hot Oatmeal (for my sweet tooth) with brown sugar Brown rice with chicken Tuna is good! I just read through six pages of diet stuff... I think those three are the only healthy habits I have! LOL I may need to work on this some more...

So, I've been sticking to the endo diet 99% these last few days (I still can't give up a little drink), and I feel sooo much better already! It has prompted me to do something I've thought about for a long time but never actually done - go completely vegan. So that means, no meat, no dairy, no eggs, no wheat, no caffeine, no sugar, no soya. Phew!! I have been reading loads about meat and dairy and the hormones that are pumped into it all. I can't afford to eat organic all the time so I thought screw it, I'll give it all up!! It's going to be tricky when I have to be in a field in the middle of France for the best part of 5 days, lots of chips (fries) and salad, but I reckon I can do it!!

I'm madly addicted with these crackers. They are so yummy and gluten free! If you smash them up they are a good substitute for when a recipe calls for bread crumbs.

yesterday we made pretty damn good gluten free bread. We cheated by using a bread machine (found for free beside the road in West Virginia, with a sign saying "bread machine and kerosene heater for free. please leave the bench). It won't help those with egg or yeast allergies, though.
But the ingredients were: 1/3 millet flour and 2/3 bob's redmill gluten free all purpose flour xanthum gum coconut milk bread machine yeast salt egg whites corn starch

That sounds great Rustmyrtle. I love millet flour and I've been fighting with myself about Bob's gluten free flour. The cost kind of takes away my enthusiasm. But I think you've sold me and since I'm going grocery shopping today I just might have to pick up some.
What is xanthum gum?? And what are the measurements for the other ingredients?
