Jenaya, just wanted to let you know you can get food dehydrators really cheaply at redneck hunting stores--for about $30. We have one and we LOVE it. Use it all the time, for all sorts of things. It makes great snacks. But hunters use dehydrators to dry venison or whatever if they are out for a long hunt and can't preserve the meat. so in a redneck store, dehydrators are cheap. in yuppie stores, they are expensive. but the redneck ones are absolutely fine.

Lol it's funny because I remember you saying that and my husband and I have been planning on finding one from a hunting store. I get my first paycheck in 3 years on Friday. I am so excited! Haha

Do you girls monitor your water intake? I saw something online about drinking enough water and it was a huge reminder to me to make sure I get enough. I made a horrible realization that I only drink one 20oz bottle a day! That's not nearly enough!

So you know I am glad in a way that I did mess up yesterday because I have to be honest I didn't think the food I was eating could make that much of a difference and now I know it does. A few years ago, I thought the same exact thing and was incredibly amazed when diet had such an immediate change in my symptoms! But, I'm glad you have an understanding of why 30 days can make such a difference, and I hope your reset is going well! Just think - in a month, you can try out all sorts of foods and have a really good idea of exactly what is causing that pinching claw feeling. Rust - thanks for the tip on the dehydrator for a steal! And Jenaya, yes, I drink a lot of water each day. I go through about 50 ounces at work and more at home. If I don't, I get super thirsty! I finally had more energy today! I was able to stay late for work, clean the kitchen, and even do some laundry! Normally on work nights it's all I can do to make it home and find something to eat.

I'm doing fine with everything so far, but I forgot about communion! I took my communion (small piece of unleavened bread and grape juice) yesterday. I don't know how I'm going to get around that each Sunday.
With everyone talking about the dehydrator, I remembered my dad has a smoker he uses to make smoked salmon. I am going to try to make some sweet potato and apple chips in it when I go to my dad's later this week.
Anyone have ideas for snacks while on the go? I do fine at home, but I need something I can eat while running errands that doesn't need to be heated up.

I got glutened yesterday I'm so bummed out! I was doing so well! It was a total accident. I was trying some Asian stir fry that a coworker had and half way through it they tell me there is soy sauce in it which has wheat. About 2 hours later, the brainfog hit and I just couldn't think straight for the rest of my shift. I could barely get out of bed this morning because my body hurt so badly. Today I'm just so damn fatigued and I feel awful with stomach pain. I hate gluten so much. It makes me so sick. Oh well. I tried my best but now I have to start over. I just hope this crap gets out of my system soon.

Oh Jenaya! That totally sucks!! Hope you feel better soon.
I ended up doing a little cheating, which is not like me. I think I was kicking up my heels a little since I hit my year anniversary of eating clean. Anyway it started with some of that coconut icecream (sweetened with agave). Then I ended up foraging some Sumac berries in their prime. These taste like lemon so I made sumacade (like lemonade) sweetened with a little raw honey. THEN, I decided I wanted to make paleo zuchini bread - just a seasonal craving and I have way too much zuch. So I used a gluten free/ almond flour mix but added some honey as a sweetener. I'm over it now, so here I go starting over, also.

I think we can set some ground rules: if you intentionally cheat, start over. If a small amount of something sneaks into your food despite your best efforts to avoid it (asking a waiter/waitress ingredients, etc.) but it still sneaks in, continue on but just be more careful in the future. This stuff is in EVERYTHING. I'm not so convinced honey counts as sugar as it's natural and not processed, though I'm skeptical of the agave... Your call.
I'm 12 days in so far. At this point, I don't even really think twice about what goes in my mouth. Someone left out a box of really, really nice chocolates on our kitchenette counter at work and I looked right past them, wasn't even tempted! It's amazing how quickly the taste buds can re-set.
How's everyone else? What's for dinner this week?

I know what you mean Karen on the honey versus Agave. The Agave is definitely worse. Honey is a whole food but I also look at it like a sweetener. For now it's a cheat but, once I'm in a different phase of health, I will treat raw, local, honey a bit differently than I do now. Dinner this week will depend a little on my farmers at the market today. They are supposed to be back in steaks and sidepork. Sidepork and eggs for breakfast is my favorite! Goat liver wrapped in bacon with apple (I usually use pineapple or water chestnut but apples are abundant now) I'm towards my worst days so I'm about to bust out some beef heart/ broccoli stirfry (for the CoQ10) Goat burgers, home made french fries and home made ketchup (lacto-fermented A friend gave me a recipe for a pumpkin pie smoothie - I'm going to try it this week after I bake some pumpkin or squash. We'll have more zuch fritters (sigh) with tomato basil salad on the side. I'm canning apple butter and tomato basil soup so I imagine we'll be sneaking a few bowls of those now and then. Green beans, brocolli, swiss chard, tomatoes and squash are all in the veggie lineup. Also, I'm going foraging for wild mushrooms today so, with any luck, I will have mushrooms in the mix.

Does no sugar mean no fruit or anything? Isn't there sugar in most foods?

Jaye - I meant to congratulate you on one year of clean eating! Quite an accomplishment. No sugar means nothing that has to be processed in order to be sweet. Like white cane sugar, corn syrup, etc. Real, whole foods are a-okay!

Thanks Karen! Honestly, it feels normal to me now. I love that you said this! It's only difficult in the beginning and once you get used to it, it becomes second nature.

How's everyone doing? I'm on day 17, feeling fine. The M&M cravings were gone last week and I'm not thinking about what to eat so much.
A friend is interested in doing a Whole30 and I invited her to dinner for a Whole30-approved meal. I invited 2 other friends. Haven't come up with the menu yet - will be working from home tomorrow morning and figuring it out, so any suggestions would be appreciated! I know for sure I'll have a beet salad of sorts.
