Hiya im been reading the recipe and diet book for endometriosis and really want to try it to so I can become in control of my endo instead of it being in control of me (if that makes sense!) im confused about the whole gluten free aspect of the diet. I've made a list of loads of flour so far that I would need to put on the shopping list - Almond flour, Amaranth flour, Quinoa flour, Oat flour, Rice flour, potato flour and buckwheat are all on my shopping list! can this all be replaced with just a regular gluten free self raising flour from the supermarket? and also how much of a difference does it make if the flour isn't organic. Any help would be amazing!! thank you! x

GF flours are tricky. Honestly, I haven't found a GF replacement that I like at all. The taste, the texture, etc. Even a local bakery that's known for having GF breads and other foods, they're just all yuck. I'm sure you can find some mixes out there that might be passable to you, but I haven't had any luck. I've tried coconut, almond (which I have since learned I have a food sensitivity to), tapioca, potato, rice, etc. There's also the concern of food contamination. Unless the package says GF, it may have some traces. A question I have is that why do you need to replace GF foods with imitations? Are you going to feel satisfied with the replacement enough that you won't cave and dive back into the real thing at some point? Would you consider giving up gluten and their imitations and instead try adding in more whole foods that have more nutrients? I only ask because I've had to give up a ton of foods and found that eating real, unprocessed stuff is way more satisfying and healing to my body, which makes me not even think twice about the imitations. And the imitations only make me want the real thing more... That's just my perspective and you can ignore it, but there - I said it!

I've been spending a lot of time on a message board focused on healing your body with only whole foods (Whole30) following a paleo diet. They call eating imitations Sex With Your Pants On, meaning the imitation isn't always as good as the real thing and eventually, you'll want to take your pants off and enjoy the real thing. whole30.com/2011/10/sex-with-your-pants-on/If you're still curious to experiment, give some GF substitutes a try. But don't expect to find an exact substitute for what you're used to!
