For those that are really busy and sometimes fall short of time to prepare a meal, I have come across these frozen dinners that are all natural, organic, gluten free. The biggest perk for me is that most of these dinners are insulin resistant diet friendly too. ;D They are called "Amy's" and if you go to her website she has diet plans too. I ate the cheese enchiladas today and I was actually extremely surprised at how good they were! They don't have that nasty frozen taste, they aren't fake tasting, and they are truly really good and good for you! Here's a link of you want to see what they have. Hmm so not all of it is endo friendly but I do appreciate how it's all organic and gluten free. That's nice!

Speaking of frozen foods, I find that a bag or two of frozen veggies is a huge help when in a pinch. I always have corn and peas on hand, and when I'm off to work without a thing to bring for lunch, some frozen peas or corn and a slab of whatever leftover protein I had the night before always tides me over!

I LOVE AMYS! I feed it to Jacob too and he eats it with no idea that it is good for him. I have been able to take him to our gluten free bakery and he enjoys all of it. The frozen veggies and fruit go in my blender nice for shakes and I grab them and throw them in a bag for snacks. It makes life so much easier I am on the go all the time.

The frozen veggie thing really helps too! Amy's stuff is really good. I'm still surprised at how good those little enchiladas were. And they are a good source of fiber too! ;D

Ohhh, I love Amy's. It's the only frozen food product I'll eat. The spinanch and feta pocket is my fav! A lot of her stuff has soy and tofu, but still awesome nonetheless.

I want to make a cooking show on TV with my boyfriend about allergy-free cooking. We will be making everything gluten-free and soy-free. Then based on requests we will cook for other allergies. Then we wanted to make frozen meals so people with allergies/intolerances/special diets can eat without having cook every damn meal!!!
I'm working on it.. ;-)

Amy's is lovely! Not so much endo friendly though unfortunately!
They do Clive's Pie's over here which are endo friendly, and you get to have a pie!!!!

I love Amy's. They are all vegetarian too. We've been Amy groupies for a while.
But they aren't that endofriendly. I think their canned chilis (which are really good) have soy in them.

I get Amy's all the time, but have been trying to slow down on how much frozen meals I get since they are a no-no on the endometriosis diet. That, and a lot of Amy's foods have soy, which I am staying away from. I also do not do dairy. But some of her foods ARE gluten free, which is nice.
