It was so sad, because there was this maybe 12 year old boy sitting across from me and his ENTIRE ARM reacted to EVERY SINGLE THING he was tested for. There were like, 30 giant red bumps going up and down his arm, i felt so bad for him!

Yeah, I had the scratch test when I was little - first a ton on my back, then the ones that I reacted to got me a shot in the arm. I still have the list from way back when, and there was a lot on it... Strangely, nothing showed up on a scratch test 2 years ago. Nothing, not even the environmental stuff I was totally allergic to back in the day. But some of the foods that I tested positive for before showed up on the blood sensitivity test. How odd.
And there are mainstream tests for gluten, might be worth at least looking into that one at some point? Or you can try eliminating some things like sugar, dairy, gluten, etc. for a few weeks, see if you notice a difference.
