When i first started my diet, i couldnt think of any good uses for coconut milk, now i love it, its a staple food. So i thought id share how i use it. Its been a wonderful way to overcome the lack of anything creamy in my diet, and provides some much needed healthy fat that my diet would otherwise be seriously lacking.
1 - Stir fries, works great with some simple curry paste. Never fails to taste great in a stir fry like this, works especially well in fish stir fries.
2 - On fruit - A couple of tablespoons coating some fresh cut up fruit is a wonderful breakfast or snack, even works with tin fruit if wanting something quick and easy for desert.
3 - diluted with cereal as an alternative to dairy milk
4 - mixed with mashed avacado to make a dip, perfect with some cut up carrot.
5 - Lasagne - this was my most recent discovery, makes a wonderful cream sauce on top, and can use a bit to cream up the main mix. The coconut is not a dominate flavour, and sprinkling paprika on top will cause it to brown in the oven. Using it with gluten free lasagne sheets makes a gluten and dairy free lasagne. My husband raved about this when i made it with just a simple filling of fried eggplant, spinach, tomatoes, shallots, garlic, olive oil and a bit coconut milk (plus a few tasty herbs, basil and oregano, pepper, mmmm).
6 - Anywhere u would have previously used milk or cream.
Feel free to add to this thread if u have any other wonderful ways to use it. According to the endo diet from this site its meant to be good for endo, so its been great to discover so many wonderful uses, and makes me feel like im eating something rich and creamy, makes food a real treat.
