In a quest to rule out any other possible causes for my chronic stomach cramps and other horrid digestive system type symptoms, i have gone to an allergy specialist and am now on a full elimination diet. Elimination meaning that I pretty much have eliminated everything.
I am totally clueless when it comes to the kitchen, so I am hoping that you wonderful Endo-Resolved people might be able to help me work out some interesting (and still tasty meals and snacks from a very limited range of ingredients). I feel I am running out of creative food options and i am only a week in (prob at least another 3 months to go).
Fruit: pear
Vegies: cabbage/beans/beansprouts/iceberg lettuce/potato/choko/chives/leek/lentils & legumes/swedes
Meats: most meats ok as long as they are fresh
Seafood: fresh white fish only
Seasonings/flavours: salt/baking powder/cream of tartare/gelatine/vanilla essence/poppy seeds/garlic/parsley/shallots/golden syrup/sugar/carob
Cereals/Grains/flours: Rice and rice products/buckwheat/millet/potato flour/sago/amaranth
Eggs/dairy free margarine/canola & safflower oil
Yeh, unfortunately that is pretty much it... Any ideas/suggestions (however out there) are appreciated!!! TIA!

That is SOOO tough! You are very limited! geesh... you could probably get all those things at the grocey store in one stop for under $75 dollars! I was looking over your ingedients trying to see the options... one thing that I find is very good is to buy some fresh halibut or cod... those are both forms of white fish... and they have VERY mild taste (they aren't fishy at all!) The thickness will vary... but if it's about 1 and a half- 2 inches thick... then bake it in the oven for about 20 minutes at 350 degrees. Mince garlic and chop some parsley on saturate the top have the fillet (hehe)... you could use some of your dairy free margerine to make a 'garlic butter spread' by mixing the garlic and parsley into the butter and using that on the fillet. I think this sounds sooo good (I love anything galic! lol) Hopefully things work out for you! I wish you the best of luck!

Ohhh, thanks Nikki - the fish sounds yummy! i think i will try that next week. Also the garlic butter suggestion is a good one - I am having garlic butter on just about everything atm - it's the tastiest thing I am allowed to eat!
and yeh, my weekly shopping cost less than $60 this week - but then i went to a wholefoods store and bought just about everything I am allowed to eat in the whole store - gave me a little bit more variety, so this week is a little more bearable.
On the upside - my cramps are definitely less painful!

Garlic is meant to be great for stomach cramps, I eat a very limited diet because I try to eat most things fresh and am a veggie!!
I love vegetables and by chance discovered mashed swede, it is sooo yummy!! Boil your swede and then mash t up with a bit of broccoli and maybe some carrot, it does look a bit like baby food but tases sooooo good, I normally add a little bit of butter or marg and it just soooo gorgeous!!
Because there is so many flavours in the mash you can have it with a plain meat or fish. It really is yummy!!
Have you ever thoght of trying a meat supplement? Im not a huge fan of soya or tofu but I do really enjoy quorm. You can try lots of different types and add flovours to it because it comes plain.
I will have a think more about what you are allowed to eat and how I could prepare it, I'll get back to you when Ive got a few more ideas!!

Thanks Chloe, will definitely try mash swedes (altho cannot seem to find them at the fruit market atm). Unfortunately cannot have any other vegies other than previously mentioned - soya & tofu also no nos Any other ideas appreciated! - I was thinking I might try a fish pie of sorts ? Lucky for me, my symptoms are settling a little, so I will probably start challenges next week and then hopefully my diet will be slightly less limited... Thats really interesting about the garlic. I did not know that! I love garlic too!!!
