Ok, now that I am home again, and have some time to myself, I will add a few of my favorite recipes that you may like. These were given to me by family and friends. I hope you can enjoy them as well. Mind you I grew up in Minnesota, so some of them are very Norwegian.
As I mentioned before I have a
TON of recipes, so if there is anything anyone is looking for, please ask, I'd be happy to add more. Also I know some of you cannot eat certain ingredients, so if you need any help substituting, please let me know, I'll see what I can come up with.
5 Bean Hotdish
1/2 lb hamburger
1 tsp yellow mustard
2 tsp vinegar
1/2 lb bacon
½ cup white sugar
1 tsp salt
½ cup chopped onion- I use 1 small onion.
¾ cup brown sugar
½ cup ketchup
Brown hamburger, onion, & bacon (I add 1 lb each of hamburger and bacon. It’s easier to cut the bacon into little 1 inch pieces to cook.) Add remaining ingredients.
Beans needed: 2 lg cans Bush’s Baked Beans. 1 can of Butter Beans, 1 can Lima Beans, 1 can Kidney Beans, 1 can garbanzo beans (or chick peas) Rinse and drain all beans except Bush’s Baked Beans. Put beans in Crockpot, or large Dutch oven. Mix hamburger mixture into the beans very gently. Cook over low heat until not so soupy.
This makes a lot of hot dish. Great for gatherings and barbeques. Tastes even better reheated!
3,2,1 or Apple Pickle Onion Salad.
3 large dill pickles chopped
2 red delicious apples or any sweet apple you like
1 small onion chopped
salt and pepper
miracle whip
Mix top 3 ingredients in a bowl. Add enough miracle whip to make it hold together- just a few tablespoons to your desire. Add salt and pepper to taste. Chill well before serving.
- I know that sounds weird. My moms family has made this for as long as I can remember. It is odd, but all the ingredients mellow well together.
Oven Baked Pork Chops
6 pork chops- trim fat around edges. (easy to use center cut chops)
Brown the pork chops.
2 cans Campbell’s Golden Mushroom Soup
2 Tbsp of Beef Bouillon Soup
1 cup of water (add more water for desired consistency of gravy.) Mix together.
Place pork chops in baking pan, pour gravy mixture over chops, cover and bake for 2 hours at 375’.
-My step mom makes this and serves it always with baked potatoes and peas. It all mixes quite well together as a meal. She doesn't make much for food, but this has always gone over well.
Spicy Shrimp
Marinade ingredients:
Juice and zest of 2 limes
3 hot chili peppers, seeded and sliced
2 stalks lemon grass, outer leaves removed, sliced
1 (2 in) piece ginger, grated (about 2 Tbsp)
2 cloves garlic, crushed
6 Tbsp. olive oil
1 Tbsp chopped cilantro
1 lb. jumbo shrimp, shelled and deveined.
Combine marinade ingredients together and mix well. Add the shrimp and coat well. Refrigerate at least 4 hours to marinade. Thread on skewers, and grill over medium high heat for 3-5 minutes on each side or until they turn pink. Do not overcook.
Yields 2-3 servings, recipe from inter courses, an aphrodisiac cookbook.

Beef Roast Ala Freak Show
3-4 lb beef chuck roast
1 bag baby carrots
3-4 large potatoes washed and cubed in 1 ½ inch chunks.
1 large can of cream of mushroom soup
salt and pepper to taste
Cover roast in salt and pepper. Pat or rub the seasoning on the roast. Place in a roaster pan and in the over for 10 minutes at 400*. This will sear the juices into the meat. Lower the heat to 350* and add 1 cup of water. Cover roast for 1 ½ hours. Add the rest of the ingredients and over again. Cook for an additional 1 ½ hours more or until potatoes are tender and the juice runs clear out of the roast when you poke it with a fork.
You can also make this in the crock pot and cook on low all day. Just sear the meat first in the oven and then transfer to the Crock pot, add all the rest of the ingredients and cook all day on low heat. I make this when I work nights I’ll set it up before I go to bed after work and when I wake up later the house smells so good!! My aunt gave this recipe to me, when she stayed we used the term freak show, and she sent the recipe in honor of herself, my freak show aunt.
French Onion Soup
Onions (3 large thinly sliced- I try to use sweet onions
1/3 cup butter
3 cans -10.5 oz each of condensed beef broth
1 tsp Worcestershire sauce
¼ tsp salt
dash of pepper
French bread sliced 1” thick and toasted
Grated parmesan cheese
In a large stockpot or Dutch oven melt butter over low heat, add onions. Raise heat to medium low and cook onions until tender and lightly browned, about 20 minutes. Add broth and Worcestershire sauce. Bring to boiling. Season with salt and pepper. Sprinkle toast with cheese, place under broiler or in toaster oven until cheese melted and lightly brown. Fill bowls with soup and add toast slices on top. Serves 6-8
