I heard that flax seed oil was good for gallbladder issues, as well as other things, so I made a salad dressing out of it:
1/2 cup flax seed oil 1/4 cup apple cider vinegar (a little more, if you want to make sure the flax seed oil flavor isn't too strong, or the dressing isn't too thick for your liking) 1 tsp garlic powder 1 tsp onion powder 1 tsp dried lemon peel 1 tsp lemon pepper seasoning (McCormick Perfect Pinch, otherwise, too much pepper) 1 tsp Italian seasoning 1 tsp dried parsley 2 pinches of sugar 1 pinch of salt
OMG, it's delicious.

Made an awesome taco dish last night. Everything I used was organic, of course:
Make rice according to directions. About 1/2 way through, add a can of diced tomatoes with chiles. Brown some ground sirloin and add 1/2 a chopped onion. Strain off any fat, return to pan, and then add 2 chipotles in adobo (less if you don't like moderate spice or more if you like it extra spicy!), 1 tablespoon of chili powder, and salt and pepper to taste. Heat up a can of black beans and add a tablesoon of chopped onion. I served in warm corn tortillas with fresh spinach. Top with cheese if you can handle it.
SOOOOOO good!

Yay, I'm glad! I made a recipe off one of Rachel Ray's shows on Sunday. So good as well...
Brown 4 pieces of chicken (bone-in) in a saute pan (I used chicken quarters). Remove chicken, add some olive oil, and saute a package of crimini mushrooms for about 5 minutes. Add 2 chopped carrots, 1 diced sweet onion, 2 chopped ribs of celery, and 3-4 chopped cloves of garlic. Sweat the veggies for about 5 minutes more, and then deglaze the pan with about a cup of chicken (or veggie) stock and a cup of dry white wine. Return the chicken to the pan, cover, and simmer for 30 min to an hour. Serve on top of mashed potatoes. It was UNBELIEVABLE. So good!

Hmm, sounds good (minus the mushroom - blegh!). Might have to try that! Thanks for sharing! I just so happen to have a bunch of potatoes to go through...
I'm really stuck in a recipe rut, but more of that has to do with my motivation to shop and cook than anything.

I've been too since I started "the diet" again. It's hard to find things to cook that are good without doing a protien, a veg, and rice EVERY NIGHT It helps that I found this unbelievable organic meat "farm" stand this past month. This guy who lives near us is a chef and his wife came down with some disease. They were beating their head against the wall trying to find good, organic food in our area so he decided to farm his own! He raises his own cattle, chickens, lambs, pigs...and is certified organic by the FDA. It's friggin great as he lives about 5 minutes from me. He makes his own sausage and even has fresh caught fish. SO GOOD. That's made it a bit easier for us as I know how a variety of good, healthy meats to choose from!

Awesome! I feel the same way about my co-op store that opened up down the street. The meat is fresh & SO much yummier! I do a lot of stir frys but am burnt out on those, so your suggestions are appreciated!

Any ideas for breakfast. I had been eating carbs every morning, wheat bagel, or toast and now I have been giving up wheat and really miss the bread.

I usually have oatmeal with cut up fresh fruit, sweetened with agave necter. Also, check out some cereals. I forget the brand name, but there's a myriad of organic cereals out there that are wheat and soy free...use almond milk in lieu of soy or regular milk. Top it with banana or strawberries for extra substance. I'll also eat a hard boiled egg as well. I'm not completely strict with the endo diet though. I still eat meat and a few other things here or there.

jem have you tried the non-wheat breads? maybe with peanut butter they will be good and you can get some protein from the peanut butter. Let me confess, I never, ever eat breakfast, ever, ever, and the reason has always been that I really don't like breakfast foods. Right after surgery I was doing well eating smoothies for "breakfast" granted I didn't have to get up and go to work so I could really take my time. I just have always hated rushing around trying to make food when all I want to do is leave and get to work/school. plus I never felt well after eggs and bacon, or oatmeal, or cereal with milk.... so it's just not for me.

I typically have a piece of fruit for breakfast - I fall into the no-time crowd, too. There are tons of cereals out there that are gluten free - a lot of the cornflakes or rice cereals (several types of Chex!). I found some gluten-free waffles, though they're just ok. Oh, and I used to make my own granola bars back in the day (until I figured out my body is sensitive oats).
