Karen I wasn't aware, the only reason I incorporated barley to my diet was because the Endo recipe book said that it contains fibre. Well you learn something new everyday.

I saw this on Dr. Oz today and thought it was great! It's called the "Culinary Institute $5 Veggie Pasta Pie." It's cheap, easy, and loaded with veggies. Pumpkin Muffins
1/2 cup coconut flour 1/2 cup organic honey 1/2 cup pureed pumpkin 1/2 tsp bicarb soda 2 tablespoons coconut oil (or neutral tasting oil) 3 organic eggs 1 teaspoon vanilla extract
In a bowl mix together the coconut flour and bicarb soda. In another bowl mix together the wet ingredients (honey, pumpkin, oil, eggs and vaniila). Pour the wet ingredients into the coconut flour mixture and mix gently. Transfer the batter in to a paper lined muffin tin and bake in a preheated oven (170°C) for 25-30 minutes or until cooked through.
