I haven't tried spaghetti squash yet! I will have to try it. Do you cook it first?

I've been working on the perfect spaghetti for a few years and figured I'd share. (In the summer when heirloom tomatoes are available, I'll use a few big ones and skip the jar of spaghetti sauce.) I've gotten some weird looks for throwing so many things into it, but it's always a hit! - organic sweet Italian sausage - garlic - a few cloves - a bit of chopped up onion - 1 red bell pepper - whatever veggies I have on hand - zuchinni, spinach, etc. - 1 jar of organic, sugar-free, citric acid-free spaghetti sauce (hard to find, but well worth it!) OR 3 large, meaty heirloom tomatoes - gluten-free noodles (I prefer the quinoa/corn blend over brown rice) - salt & pepper to taste - Basil or whatever seasonings available Brown the sausage with the onions & garlic. Add the other veggies and sauce. Simmer for a while until veggies are no longer crisp. Serve over noodles. Attachments:

I cut the squash in 1/2 length wise, just be careful because the rind is tough so I usually just do 1/2 and then flip it over and cut the other 1/2 and meet on the sides and break it open. I just run it under some water and usually only cook 1 half at a time. So run it under water, put it face down on a papertowel in the microwave and cook it for 5 minutes. Careful when you take it out, I usually use a mitt. You'll see the garbage part, just scoop the seeds and mess with a spoon. Then take a fork and literally just scrape it along the squash, it will peel up like shreads of spaghetti! Then you can put some sauce on it or whatever you like! Yummy, low cal, and endo friendly!

HAHA that's funny! I actually thought those bell peppers were representing the kidneys. I'm still trying to figure out what the pancreas is. Maybe it's the fish?

If you like fish I have a good one for you.
take fish cutlets any kind best with Shark. I cup of cooking sherry, 2 diced cloves garlic, marinate 2 hours on each side. If you can deal with mushrooms you can add mushrooms they come out soooo good.
place in aluminum foil with a little parsley sprinkled on to and bbq.
YUMMY
I also put some mixed veggies wrapped in aluminum foil on the bbq they come out great.

I guess the ovaries are probably part of the lettuce-uterus. The peppers are too high up! I think fish-pancreas is a decent conclusion.

.... BTW- What brand of GF noodles do you guys use? The kind I tried were really grainy and kinda gross.

I've tried a few, so far not much of a fan, there is brown rice and I also have the quinoa and corn. I got mine at walmart in the GF section. Most stores have these GF pastas in with the regular ones, just read the labels. Not sure if you have a sunset foods in your area but mine has an entire LONG aisle of GF and all of those pastas are there as well. Not sure on the brands though.....my pantry is downstairs and I'm upstairs right now.

This is what I use and is by far the best I have tried so far. I can't even tell the difference between these or my old gluten-containing noodles. I love how the only ingredients are brown rice, rice bran, and water. That's it! Nothing else. I love these noodles.

Can use whatever you want inside like rice, black or red beans, veggies like tomato, zucchini, squash, onions etc... could even put meat in there if you are a meat eater ;D Cumin, Chili, Garlic, and other Mexican spices help add to the flavor. Par-boil the peppers with the jalapenos Cook the filling separately then stuff it into the bell pepper Add all cheese last (diary free cheese if you want endo friendly/lactose intolerant friendly) Put it all together and bake @350 till appealing.
