Hi there! I try to stick to the endo diet, altought, I've heard that sourdough bread (I mean the bread made with natural fermentation processes)is healtier because neutralises the anti nutrients in wheat. Anyone knows about it and the endo diet? Thanks!

Thanks Karen! Actually, I meant that kind of fermentation process, not the commercial yeast that is found in the supermarket. In spanish is called masa madre, I'm not sure how it is in English. That fermentation neutralises the anti nutrients such as phitic acid.It takes more time cause you have to wait for the flour and water to grow lactobacillus... But is worth it I guess!
