We are making a huge pot roast today! YUMMM!! Giant piece of beef chuck with celery, carrots, potatoes, and mushroom! Hog heaven! LOL I'm excited! Then we had some hummus with some almond crackers as snacks. I made my artichoke salad for lunch. This 30 day challenge isn't so bad!

Karen, you mentioned earlier in the thread that your toughest times (sticking with the diet)are on when you are on the road for work. When I did South Beach, snacks were easy... protein bars, beef jerky, etc. Do you have any snack ideas for whole 30? I find it tough because nothing can be processed and must be dairy free. This is my personal biggest difficulty with this program because sometimes I just need to grab and go (and I'm burnt out on nuts.)Any thoughts?? I also try to avoid grains.

For those of you with a sweet tooth, I just wanted to recommend a site that I found... www.blenditandmendit.com All of her recipes are dairy/gluen free, no added sugar and vegan. She does some amazing things with nuts and fruit. There are a bunch of smoothie and ice cream recipes (for instance, she uses frozen cherries, nuts, coconut water, a fig or 2, and 100% cacao to make a cherry chocolate ice cream. All of her recipes look amazing)

As for snacks,I usually grab some fruit. The whole30 is a lot stricter than this challenge,but one of the big things it does is help reset your system so you don't need to snack. Protein,veggies,and fat with every meal help fill you up and keep you satisfied for hours. If I eat enough at each meal, it tides me over to the next. I didn't believe it would work but it totally did. So I guess to answer your question, I don't snack all that much but when I do it's small like an apple. I'm way burnt out on nuts too. Olives are a good go-to as well.

Karen, glad that its working so well for you. I found some snack tips here: drhyman.com/blog/video/dr-hymans-emergency-food-pack/I work 12 hour shifts so this will come in handy for me. I like the idea of the salmon jerky and the canned salmon. Dont know bout the sardines. I also found a "recipe" on how to make yogurt with coconut milk. And, I LOVE almond butter on anything.... found a recipe on how to make almond butter with smoked almonds. Looks like it will pair well with pear slices.

Sun butter is great with apples! Unfortunately, any of the nut butters make me bloat just as much as nuts themselves. I've been toying with the idea of making my own jerky but hadn't thought of salmon! Will have to check that out, thanks.

Well, it's official. I'm on day 8 and my tummy bloat is gone! It is very noticeably flatter! Anyone else seeing some changes in their body? Symptoms?

Bowl issues and a headache. I was in the bathroom every 15 minutes for an hr in a half straight this morning. I HAD A BIG MAC AND FRIES for lunch then pasta for dinner ... I know that's real bad. I had bad cramping last night and today as well. Just goes to show the diet does work.

I know I don't have to be accountable but having to answer to someone will make me fight harder to keep going. LOL... Yes I do think it will make it easier to keep going. You know I cut out alot when you first mentioned the diet to me when I first came on here and it made a difference. I did trial and error to see what I could and couldn't deal wit. I took the easy way out. I will admit it. But cutting it all has shown me how much better I could feel by cutting it all and just changing the whole way I eat. I started on Sunday and Thursday and Friday I actually had more energy not a ton more but more and that crab claw that keeps pinching my right side wasn't pinching so bad. So you know I am glad in a way that I did mess up yesterday because I have to be honest I didn't think the food I was eating could make that much of a difference and now I know it does. I am so glad you did this challenge it has been a great learning experience and like I said I need stuff like this to push myself and prove I can do it.

Here are the almond crackers I buy: I buy them at any grocery store, sometimes you have to go to that healthy/organic isle though. They also have hazelnut crackers too which are really good. The artichoke salad recipe is in the recipe thread on page 8. Just scroll down this page a little to find it. For the 30 day challenge you'll have to skip the Parmesan cheese: endo-resolved.proboards.com/index.cgi?board=diet&action=display&thread=2835&page=1Page 5 of the recipe thread has a kale salad I also like to make that will work for the challenge. I work 12 hour shifts like you do and it's hard to find snacks and not get burnt out on. I really want to get a food dehydrator and make my own snacks. Karen, so far I have been feeling really good but I also just started taking my ALA/ALC again so I'm sure it's because of that. The 30 day challenge isn't much different than the way I already eat and I have experimented with cutting out dairy and I know it's not a problem for me. I wasn't expecting the 30 day challenge to change much for me but it's still fun to do because it forces me to pay attention a little more.
