I ate TWO stupid Doritos yesterday not thinking and I got SO sick. My head hurt, I felt brain foggy almost like I had been drugged, I became really irritable, my right ovary hurt really badly, my lymph nodes in my neck swelled up. I thought, what the hell is in those Doritos?? I read the ingredients and I see MSG. MSG is not only made from wheat but it's a nasty food additive that has been known to cause lots of problems in those of us who have food sensitivities. I can't believe how jacked up I got from such a small amount of "poison." I feel disgusted that these chemicals are being put into our food.

the processed food--wheat aside--hurts me so much. It's immediate. So amazing I ate all of this stuff for so long and didn't realize how sick it made me!

Yup - I'm with you. I have to admit I cheat from time to time, but I always pay. Always... So sad that there's so much extra crap in there that WE DON'T NEED!

That sounded so lame. I know it's not 'salt' per se. No wonder Chinese food makes me feel so bad these days :-(

I have not had 1 stomach issue since going GF/Wheat free 100%. I have to rave about this restaurant called stir crazy. They have a market bar where you can pick from rice, flat rice noodles all GF. You add on any veges to the bowl and they have afew GF sauces to add but you have to tell them you need GF. I absolutely LOVE the teriyaki one! So good! I did almost make the mistake at the end of the meal when they brought the fortune cookies, I took a bite and was like OH NO, it's got wheat so I was able to get rid of it before it went down the hatch. Crazy that we have to be so careful but it's worth the hassle to feel good. I'm obsessing over avoiding carrageenan as well - it's also disguised as "natural flavors" on alot of labels - have to be very careful.

Yeah also you have to watch out for soy sauce because that's made from wheat too. A lot of sauces like teriyaki can have gluten in it too.
Basically anything processed makes me sick now. All those chemicals my body just HATES. How awful that these chemicals are considered "safe."

I always thought wheat was good. What is it that makes it bad for us?

lots of sauces are made with flour to thicken them--either flour or corn starch. Corn starch is fine; flour isn't. Chinese sauces also have lots of sugar, generally, so it's best to avoid them. Or at least be that annoying person that asks whether they use flour or corn starch to make their sauces.
and I don't know why the most common soy sauces include wheat; it's stupid! But soy also is a heavily processed, estrogenic thing, so best to avoid also. ACH--this diet is so hard sometimes.

Kimmie it's funny because for a long time I was obsessed with wheat because you always hear how good it is for you for heart health and lowering cholesterol, has protein blah blah blah "eat your Wheaties." However it is showing to be a problem for those of us who are allergic or sensitive to a protein in wheat called gluten. Gluten/wheat intolerance is becoming extremely common now. "Gluten" is a term used for a family of gluten proteins found in wheat. Gluten literally means "glue" in Latin. It's a gooey protein that gives bread its spongy consistency and it is also in a lot of processed foods to give it shape and bind it all together. Our immune systems are recognizing these gluten proteins as foreign and reacting to them as if they are foreign, just as if we are exposed to a virus. As a result, we are getting sick. Our immune systems are going haywire and attacking normal healthy tissues in our bodies. Even though gluten intolerance/allergies are becoming common, it's still up for debate just how many symptoms its causing. It's well known that gluten allergies cause celiac disease which is a gastrointestinal disease. But more studies are coming out saying it causes a huge spectrum of disorders ranging from GI, central nervous system, psychological disorders, skin disorders, and for us, reproductive disorders. Also, there are theories that the modern diet is full of stuff that the human body isn't meant to have and the idea is that our bodies aren't handling it very well and are "fighting back." Since the gluten protein works well to bind things together, it's used in all sorts of processed foods; food we were never meant to be eating in the first place.
I'm kinda rambling now but the main point is that many of us are eating things that our bodies don't agree with and we don't even know it until we try to eliminate all of these processed foods and resort back to the way we are supposed to be eating which is fresh and whole foods.
Another issue is also with food preservatives. Those are causing the same problems. Again, we weren't meant to be eating that stuff and as a result we're all getting sick.
Overall, this is the basis for the endo diet. It strives to get rid of all this stuff that "could" be causing problems in our bodies to restore the natural balance and let your body heal itself. If your body is constantly having to fight off foreign crap we eat, then we'll never heal. If we never heal then we pop up with all sorts of problems, including endometriosis.

Well said, Jenaya! I get so pissed off when I read health newsletters from work or my insurance company that stress the importance of whole grains. Grr!
My nutritionist's motto is only eat things that your great grandmother ate. I think that sums up the bulk of the endo diet.

Jenaya, bravo, I couldn't have said it better myself! You go girl! I just wanted to throw my testimony in as well that since going GF/wheat free and sticking to the Jillian Michaels philosophy of "if it doesn't have a mother or come from the ground, don't eat it" hence very little to no processed foods I feel amazing! I have discovered so many neat fresh foods that I never would have before - fresh is best! Spaghetti squash is just one of my absolute favorites for dinner! It's funny too about the whole grains b/c back in the day, the grains weren't processed like they are now - I read an article that they cross the wheat with another type of plant ( don't quote me but I think it was a weed of some type ) to make it grow faster and more plentiful - hence why we get so much stomach upset from it now - it was never like this in the "olden days".

Aw, I didn't mean to get all RAH RAH on you guys. HAHA! I'm just frustrated at how food companies market their products like they are good for us. I used to believe all that stuff and constantly ate whole wheat because I really thought it was good for me. As a result, I got myself seriously sick!
I really do believe our diets are the root cause to many health problems and the only "health problem" that diet gets blamed on is obesity. It's not just obesity. It's chronic inflammation, autoimmune disorders, mood disorders, I could go on forever.
It's hard to eat properly ya know? We're all so busy with our lives and it's so easy to just get a quick bite rather than planning out meals and cooking. I think food companies have really picked up on this fact well so they play these marketing gimmicks claiming "quick and easy" and "healthy." And they make it quite convenient for us too! But then we end up eating all this processed stuff devoid of all vitamins and nutrients and full of chemicals instead. I really wish I had figured this stuff out a long time ago so that I didn't have to suffer for so long feeling so awful but I guess I can be thankful because you never truly appreciate a proper diet until you actually experience the benefits for yourself. Then you kinda do that slap to the forehead like, DOH! I can't believe I was making myself sick!

What is really shocking to me as well is that the foods that are marketed to us as healthy really aren’t. For instance, I like watching biggest looser yet they advertise on the show all of these processed items and I’m thinking, I just don’t get it. It doesn’t seem to go with the overall healthy approach to the show. They push their brand of BL shakes and meal bars – how can those possibly be good for anyone? A few weeks ago they were talking about this Yoplait chocolate banana smoothie in the frozen section – I checked It out and there are a whole ton of ingredients on there that a normal person can’t even pronounce – I was shocked, how can that possibly be good? I make my own smoothies now, some ice, unsweetened almond milk, banana, sometimes some peanut butter, and 2 tbsp of chia – it’s heaven and great in the car if you are short on time. The combos of fruit are endless for the smoothies, I bought some pineapple as well and am going to mix it with some coconut manna – I’m sure that will be just like a healthy tropical treat, that’s on the docket for tomorrow! YUM! I seriously can’t get enough of chia – it’s the best thing ever! You ladies have to try it! I’m very proud of myself, I decided to try really hard to give up white sugar and brown sugar and switch to agave – so far, so good, it’s been 2 weeks. I never realized how sweet the agave really is, I thought it was like honey and I added it to a raspberry smoothie and woah – it was actually too sweet, next time I know just a small amount is more than enough. As the days go on, I'm more and more almost 100% endo diet.
