Yes we have a name in states for the people who check our eggs lol. Anyways he swears by the egg beaters weird huh? Since he is the one inspecting our eggs. Anyways not sure what the extra stuff is they put in it but I am old school grab the egg when the chicken lays it lol.

I was raised in teh kitchen by a traditional southern grandmother, so I bake by sight--keeping the flour to rising (baking powder, baking soda, yeast) the same, but mixing everything else to get to the right ratio of wet to dry. So, I mix the chia seeds with water before I start mixing the other ingredients. I'm sorry I can't give you a ratio! I'm really just too backwards southern. Anyway, the chia seeds expand in the water and form a gel--the full process takes about 15 minutes. I generally make an amount that looks to me as if it were equivalent to the size of the number of eggs a recipe calls for. I'll try to experiment more exactly some time....
and Hells, I was sore for 3 - 4 days after. that run was amazing, but it certainly handed me my ass!

I generally eat them by the spoonful--mix with a little water, lime or lemon juice, and honey or agave. Wait for the seeds to become a jello-like consistency. and spoon 'em in. Not to be too rude, but the texture is sort of like a blow job, but the taste is much better. I take a couple teaspoonfuls. So I get the jello consistency part - I'm seeing that. I've been just drinking them - should I be eating them instead? Do they still stay a bit crunchy for you, or should I let them sit longer? I'm seeing less of the blow-job consistency and more of a soggy raspberry (with the crunchy seed in the center). I'm almost tempted to grind the seeds so they're in even smaller bits.

I'd add more water. Soggy raspberry sounds way too thick. I still think aiming for blow job is about right--that's what I use for cooking and as a supplement. I also add agave and lemon/lime. and teh consistency of a blow job of a well hydrated dude, not someone whose dehydrated. Those little chia seeds will keep soaking water and forming a gel--it's pretty odd.

I was posting about chia seeds in another thread about wheat, so I thought I'd post it here. I got a bag that was a mixture of stuff: chia, buckwheat, cocoa nibs, dates, almonds, evaporated cane juice. You just add water and it makes a mush (the chia thickens), and I usually add some fresh fruit to it for a snack. It also works to add some flax or protein powder too (I use a pumpkin seed one). This brand of chia seeds mixture is called "Chia Goodness." This looks like the website: ruthshempfoods.com

I'm a huge fan of chia - if you haven't tried it you should give it a shot! I have had ZERO constipation issues since I have started using it in my diet. I have it in my breakfast smoothie daily, so quick and easy and so yummy!

I have been using chia seeds in my protein shakes for about 3 weeks now and for some reason it's giving me really awful stomach bloating and horrid gas. It's REALLY bad. I took the chia seeds out of my protein shake earlier and I was fine so I know it's the seeds. I don't understand I've also noticed lately that I react violently to any vegetables too; stomach bloating and gas. I did go off of my digestion meds so maybe I should start taking them again to see if it helps. Has anyone else had this kind of reaction to the chia seeds?
