Roasted root vegetables:
Any root vegetables will do. The greater the variety, the better. I use: Beets Carrots Parsnips Sweet potatoes New potatoes Turnips Onions (red, yellow, or white, doesn't matter) At least a couple of heads of garlic
Peel everything except the potatoes, and cut everything into wedges that's round, and the parsnips and carrots in half, lengthwise. Cut the garlic heads down the middle, crosswise. Throw it all on a sheet pan. Drizzle olive oil over the top, add salt and pepper (you don't need much). Bake at 400 for 40 minutes (a bit longer, sometimes, depending on how full the sheet pan is).
HOLY BALLS. So simple, but so delicious. My favorite are the parsnips, onions, and garlic. About five minutes in, your whole house will smell of loveliness. And it goes perfectly with a raspberry chipotle marinated pork loin roast, fresh from the slow-cooker. Or a rosemary-somethingorother marinated one. YUMMEH.

Fab! I did something similar and served it with a roasted pork loin with apple chutney. Great minds think alike!
(BTW, a dash of Greek seasoning makes a big impact on those veggies, too!)

I tried this kale salad with orange tahini dressing last week at the food co-op at my school and it was REALLY good. I usually hate salads but I was pretty impressed with this! Here are the ingredients. Everything used in this salad is raw and organic: Ingredients: Kale Carrots Apples Kahlrabi Golden raisins Sunflower seeds Sea salt Dressing: Tahini Fresh squeezed orange juice Sesame oil Red chili flakes The picture attached doesn't do it justice! It's a crappy cell phone pic. I really liked this salad! And it's super healthy and endo-friendly! Attachments:

It was really good! And I hate salads! haha Kale is supposed to be really good for you so this is just a win all around! ANNNNNDD it's endo friendly! ;D

Just made a similar salad based on the ingredients you posted. I left out the tahini and red pepper flakes and added spinach along with the kale. It tasted pretty good. I'm taking it to a dinner party I'm going to tonight. I don't think anyone else will eat it haha, but at least I'll have something that's good for me to munch on.

WOW COOL! Good to know! I really need to make it at home. I just made some homemade hummus and thought I'd share! It took like 10 minutes and it's endo-friendly! So yummy!!! Here are all the ingredients I used: I drained out all the chick pea juice, threw them in a small food processor with some olive oil and lemon juice and blended the hell out of it to make it creamy. Then I added a big table spoon of minced garlic, a few dashes of sea salt, then ground the hell out of it again. I scooped it out into a dish and garnished with some of those sundried tomatoes. YUM You can make any kind! Instead of sundried tomatoes and garlic, you could do bell pepper, pine nuts and basil, jalepeno, whatever!

Not anymore. I kid, I kid. I remember years ago there were some pictures floating around the internet and there was one rough looking couple in their living room and in the background was a bottle of clearly labeled anal lube. Let's just hope that wasn't their Christmas card picture! Ok, that's the end of my thread hijack!
