Garlic Chicken
- organic chicken (I've used dark meat - legs and boneless/skinless thighs, but I'm sure it would work just as well with white meat) - olive oil - garlic - roasted garlic seasoning - white onion
1. Preheat oven to 375 F 2. Place chicken in oven pan 3. Cut up/crush garlic and mix with a few tablespoons of olive oil 4. Brush the oil/garlic mixture on the chicken 5. Sprinkle with some seasoning 6. Place a few rings of onion on top, just for flavoring 7. Bake covered for 1/2 hour, then remove cover for the remaining 20-30 minutes until done
SUPER moist, super flavorful, and best of all, super easy!!

Sesame tuna salad with wasabi vinaigrette
- tuna steak - sesame seeds - olive oil - lettuce greens - cherry tomatoes - avocado
1. Coat tuna steak with sesame seeds and a bit of salt/pepper 2. Sear for 2 minutes on each side (for rare) or longer in a small bit of olive oil over high heat 3. Cut into long strips and serve over a bed of lettuce with tomatoes and avocado. Drizzle with dressing (below)
- 1/2 teaspoon wasabi paste - 1 tablespoon rice vinegar - 1 tablespoon soy sauce - 3 tablespoons olive oil - Salt and pepper
Wisk ingredients together
Best thing is that I can easily make this in literally 5 minutes, and it has SO much flavor!

Oh my goodness I just attempted to make some carrot soup and it came it out so much better than I expected!
4 medium/large carrots, grated 1 medium onion, chopped, 1 medium - large sweet potato, cubed Black onion seeds Caraway seeds Fresh coriander (cilantro to you guys in US!) Olive oil
Gently fry onion in olive oil, with onion and caraway seeds. When softened slightly (I actually managed to burn mine a little bit!) add the seeds and fry. Then add the the carrot and sweet potato and stir, leave for a few mins. Add some water/stock of your choice (I used Knorr concentrated chicken stock) and simmeer until veg is cooked. And the stalky bits of the coriander and then blend. Add salt and black pepper to taste. Add chopped fresh coriander leaves. It's yummy!!!!

Hi, I'm not sure if I should be here, but I don't know where to go. I just got a copy of the endo diet and I'm very excited to start it. I seen that she has recipies for hot drinks and I want to know if I can still drink other organic herbal teas. I have found some that I really love and would be really sorry to have to stop drinking them..
Any response would be greatly appreciated.

Erm.......I don't see why not! I think the idea of the endo diet is to get away from sweet/sugary/fizzy drinks and milky hot drinks. I think organic herbal teas would be just fine!

Thanks, I'm starting to take the diet really slow tea and coffee are surprisingly dfficult to cut out! I'm not sure how I'll react to taking out the sugar, although peppermint essential oil on the forehead is really good for detox headache... Thanks for the reply and to everyone else for the great advice.

If you are having trouble cutting out tea, the raspberry tea recipe in the book would be a good choice as it is suppose to reduce pain, you might want to try that one as a replacement for you tea.

So, as requested by Karen, here's the recipe I just used today for bread rolls made with spelt flour. It's a by a guy called Hugh Fearnley-Whittingstall who is a bit of a celebrity chef over here. I only made half the amount but it's made 6 large rolls, you could probably get 8 out og half the mix. He's also got a similar recipe somewhere for these rolls with sunflower seeds which I'm going to try next time as I love the sweet nuttiness of them in bread. It was really easy. I bought a breadmaker at ths start of the year but I've not yet cracked how to make a loaf like this in it without it just sinking and being a dolid lump. These rolls are delicious! They'll be going with the above recipe for carrot soup!
Makes 12 rolls Ingredients 1kg wholemeal spelt flour, plus extra for dusting 10g powdered dried yeast 20g fine salt 600ml warm water A little sunflower oil
Method: How to make spelt rolls
1. Combine the flour, yeast and salt in a large mixing bowl. Add the water and, with one hand, mix to a rough dough. Adjust the consistency if you need to, with a little more flour or water, to make a soft, easily kneadable, sticky dough. Turn the dough out onto a lightly floured work surface and clean your hands.
2. Knead until the dough is smooth, stretchy and no longer sticky - about 10 minutes. Shape the dough into a tight round. Oil the surface of the dough, put it in the wiped-out mixing bowl, cover the bowl with cling film and leave to ferment and rise until doubled in size, which should take about an hour.
3. Pre-heat the oven to 250ºC/500F/mark 9, or as high as it will go. Deflate the dough by tipping it onto the work surface and pressing all over with your hands.
4. Divide the dough into 12 equal pieces. Shape into tight rounds, coat with flour and press flat with the palm of your hand to about 5cm high. Lay them on a lightly-oiled baking tray, so they are just touching each other. Leave to prove for about 30 minutes, or until nearly doubled in size.
5. Put the tray in the oven, and close the door as quick as you can. Bake for about 15 minutes, until well browned, then transfer to a wire rack to cool.

"Roast" Chicken1 Crockpot/Slow Cooker on High 1T Soy sauce 1t Sesame Oil 1t Garlic Salt 1 Organic Chicken Drizzle, sprinkle these over the chicken inside the crockpot. Pu the lid on and cook on High for 6-8 hours Leave the house and come back to a delicious smelling house. Lift out Chicken and strain remaining juices into a pot, add arrowroot to thicken and heat to make a yummy gravy. Serve with Steamed vegetables including potatoes. Rice Cake Spread
1 ripe banana Tahini (sesame seed paste) LSA (ground linseed, sunflower seed and almond) Mash altogether with a fork until well mixed. Spread onto to rice cakes. LSA PorridgeMake porridge as per packet instructions Add LSA near the end ~ 1/4C or more Mash up a ripe bannana and spread out in a bowl. Pour porridge on top. Never thought I'd eat porridge without sugar and milk until I tried this lately. Also buckwheat noodles (the ones without wheat flour added) in a bowl with miso soup and seaweed ontop make a quick tasty lunch. I have a bag of spelt flour in the cupboard that I've never opened. Spelt flour cookies earlier in the thread sound good so I might be making them some time. Spelt bread sounds good too. So glad to know what to do with my flour

I add sunflower seeds and linseeds to my spelt bread. Yesterday I made half spelt, half barleycorn flour and it's really nice!

Rice and Lentils
Fry 2 onions, 2 garlic cloves, 1T ground cumin, 2t ground coriander in oil.
Add 1C brown lentils 1C brown rice 1L Vegetable stock Cover and bring to boil, then turn heat as low as possible for 1 hour. Check near the end of cooking time to make sure it hasn't stuck to bottom of pot.

Ultra Fudge Brownies!!
1 Cup Sugar (I don't put this in, just a bit more maple/fruit syrup) ½ Cup Canola/Rapeseed Oil ½ Cup Maple Syrup/fruit syrup 1/3 Cup applesauce (if you don't have any frozen just core, peel then microwave an apple!!) 1 tsp vanilla flavouring 1 Cup free from flour (they have a special flour mix in the book but I just use any free from flour, usually just white) ½ Cup cocoa powder 2 tsps xanthan gum ¼ tsp salt ½ Cup walnuts (optional) ½ Cup free from choc chips (optional)
Essentially mix the wet ingredients in one bowl, the dry in another and gradually combine. Bake for 40 mins – although I find 30 is usually enough. Let cool completely before cutting – I can never do this, I get a spoon and munch it down warm!!!
